Easy homemade almond apricot granola

Homemade granola is a sweet, comforting and easy way to replace grocery store cereals that are usually highly charged with sugar and saturated fats which are really unhealthy for your body. Our granola will bring you the energy you need towards the days while making your breakfast a real treat!

What you need

  • 2 cups of oats, preferably organic
  • ½ cup of almonds, chopped
  • ½ cup of dried apricots, chopped
  • ¼ cup of raw seeds (chia or sunflower seeds are great)
  • 2-3 tablespoons maple syrup or raw honey (or a combo of both)
  • 2 tablespoons virgin coconut oil
  • ½ teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • 1 pinch of salt

Let’s get started

This recipe is really easy and can be realized in only a few steps.

Preheat your oven at 200 degrees celcius.

In a large bowl, combine the oats, almonds, oats and seeds (we use a mix of chia and sunflower seeds) and stir everything together. Add the cinnamon and salt.

Melt the coconut oil in a smaller bowl. You could put it i n the microwave but it might destroyed its nutricious benefits so we advise you to melt it in a water bath. Once it is melted, add the honey, mapple syrup and vanilla extract and stir evrything together.

Add the liquid mixture to the large bowl and stir everything together. Now the fun part: stir evrything together with your hands. You mixture has to be sticky but not too much and all the oats have to be moist so you really have to work the mixture out with your hands.

Once done, place your granola on a baking tray covered with baking paper. You don’t have to add any fat as it’s already in your granola! Create an even layer in order to prevent your granola to cook uneavenly.

Put in the oven for 20 minuts. Watch you granola every 5 minuts and if it doesn’t cook eavenly just move it a little bit on the baking tray with a wooden spoon. Take your granola out when it’s golden.

 

You’re done! You can keep you granola up to 5 days in a glass container in a dry and cool place. We advice you to have it with plain organic yogurt and a large cup of tea in the morning to start everyday with a sweet healthy energy kick or to have a break during the afternoon.
